GF Banana Bread

Approx. 70 minutes to prepare.

Ingredients:

 - 3 Medium ripe bananas (approx. 1 1/2 cups)

 - 1/2 Teaspoon pure vanilla extract

 - 1 Large egg

 - 3 Tablespoons coconut oil, melted

 - 1/4 Cup organic cane sugar

 - 1/4 Cup packed organic brown sugar

 - 2-3 Tablespoons maple syrup ​

 - 3 1/2 Teaspoons baking powder

 - 3/4 Teaspoon sea salt

 - 1/2 Teaspoon ground cinnamon

 - 3/4 Cup Almond milk (or other dairy-free milk)

 - 1  1/4 Cup Almond meal

 - 1  1/4 Cup gluten-free flour blend

 - 1  1/4 Cup gluten-free oats

Directions:

 1. Preheat oven to 180 degrees C and line a 20 by 10 cm loaf pan 

 2. Mash banana in a large bowl.

 3. Add all ingredients from vanilla extract through to the almond milk       and whisk to combine.

 4. Finally, add almond meal, gluten free flour blend and oats and stir.

 5. Cook for 1 hour or until the top is golden brown.

 6. Once bread has cooled, cut into a thick slice and serve with a light        sprinkle of icing sugar over the top!​
