Mixed Salad

Approx. 30 minutes to prepare.

Ingredients:

 - 1/4 cup Roasted Almonds

 - 1 Avocado

 - 1 cup Quinoa

 - 1 cup Lettuce 

 - 1/2 Red Capsicum

 - 1 cup Kale

 - Balsamic vinegar (to taste)

 - 1/2 cup Strawberries (optional)

Directions:

 1. Combine 1 cup of washed quinoa to 1 1/2 cups water and place them both into a pot.

 2. Add a very small pinch of sea salt and bring to the boil. Reduce the heat to very low and place on a lid.

 3. Simmer quinoa over a low heat for 15 minutes or until all the water has absorbed then turn off the heat.

 4. Rest the quinoa for 10 minutes and fluff up the quinoa with a fork before serving.

 5. Whilst the quino is resting, cut the almonds, avocado, capsicum and strawberries and place in medium bowl along with washed lettuce. 

 6. Add quinoa and dressing and serve!
